500gr tôm thẻ cắt bỏ phần ngang mắt và râu, rút chỉ sống lưng, rửa lại cho sạch, đem tôm ngâm với 200ml rượu trắng cho bớt tanh và sạch nhớt trong khoảng 30 phút.
Cắt khúc 50gr Hành boa rô. Cắt đôi nửa củ Hành tây. Cắt lát 3 miếng Chanh vàng. Cắt lát 100gr Táo. Cắt lát 15gr Gừng. Cho hỗn hợp rau củ vào nồi, thêm vào 10gr Ớt khô, 5gr Tiêu hạt. Thêm vào nồi 600ml Nước. Nấu đến khi sôi, hạ lửa nhỏ. Cho vào 300ml Nước tương, 200ml Rượu Mirin, 3 muỗng canh Đường. Nấu thêm 5 phút thì tắt bếp. Lọc lấy phần nước tương, để nguội.
Cắt lát 10gr tỏi, cắt khoanh 1 trái Ớt đỏ và 1 trái Ớt xanh. Xếp tôm vào hộp thuỷ tinh, rải ớt và tỏi lên trên rồi đổ phần hỗn hợp nước ngâm cho ngập tôm. Ngâm khoảng 2-3 ngày trong tủ lạnh là có thể dùng được.
Cho tôm ra đĩa, rắc mè rang và trang trí với tỏi ớt trên mặt. Ăn cùng cơm trắng khi còn nóng. Thịt tôm tươi rói ngấm đều hỗn hợp nước tương ngâm mặn thơm, kích thích vị giác. Hãy đổi mới khẩu vị cả nhà với món tôm ngâm hấp dẫn này nhé!
